Market Flavours: Cherry pie recipe

For the first time in years, I baked a pie, using sour cherries from the market. I used Foodland Ontario’s Super Simple Cherry Pie recipe, which was perfect for me since I can’t make a pie crust to save my life. With this recipe, you use a half package of puff pastry, roll it out into a large irregular circle, then pile the cherries (sweetened slightly and with a bit of cornstarch or rice flour as a thickener) in the middle and fold the edges of the pastry over the top to make a rustic crust. The pastry doesn’t need cover the cherries, just wrap up around the edges. I really should have taken a picture of it, but we invited over a neighbour and ate the entire pie in one sitting.

You can buy both sweet (for eating) and sour (for baking) cherries from Loffredo Fruit Farms at St. Andrew’s Farmers’ Market on Saturdays, 9am-1pm.
